  1. extrapolated percentage of bread. all percentages are of flour only:
  3. 500g white
  4. 250g wheat
  5. 66% water
  7. general guideline for white/wheat:
  9. 100% bread flour
  10. 70% water
  11. 1% fresh yeast
  12. 2% salt
  14. bake 425 degrees for 45 minutes
