  1. this works for any fruit
  2. For the batter:
  3. 1/2 cup (1 stick) unsalted butter, room temp
  4. 1 1/4 cup granulated white sugar
  5. 1 1/3 cups self-rising flour (or all-purpose flour plus 2 teaspoons baking powder and 1/2 teaspoon fine salt)
  6. 1/3 cup rolled oats
  7. 2/3 cup whole milk
  8. For the top:
  9. 1/4 cup granulated white sugar
  10. cold water spritzed generously over the top
  11. chop fruit, add to skillet, cover with batter
  12. - Bake at 375 F for about 45 minutes, or until browned and crispy.
