1 bunch spinach
1.5tsp soysauce
1.5tsp sesame/sunflower oil
1 spring onion choppped
1 garlic clove crushed
blanch greens for 30 seconds and rinse,
squeeze all water from the spinach
combine ingredients with sliced blanched squeezed spinach, chill for 2-3 hours. sub out for arugula if you like
