2 tablespoons vegetable oil
1/4 medium onion (diced)
1 1/2 cups uncooked long grain white rice
3 cloves garlic (finely chopped)
2 1/2 cups chicken broth (homemade, canned, or made from bouillon cubes/powder)
1 cup tomato puree
Optional: 4 heaping tablespoons fresh parsley (finely chopped)
Optional: 1/2 cup chopped vegetables (carrots, green beans, bell pepper, peas, etc.)
fry onions until translucent
fry rice in oil for 5min
add stock, puree
simmer 20 minutes, remove from flame and rest 10
