  1. 1c cornmeal
  2. 4c water
  3. add to boiling water, stir constantly until trace, turn to low.
  4. 30 minutes: stir every 5 minutes on low.
  5. flame off, add shredded cheese, salt, pepper
  6. rest 5 min covered.
